Double carb burrito? Yes please.

So I just got home, thought I would make a little snack, all these leftovers from thanksgiving and those flat outs( healthy burrito wraps) so what do I do? I saute a half cup mashed potatoes and ad in about another half cup of the Mac n cheese, sauteed until warm added some crushed red  pepper flakes and some black pepper. Wrapped it all in a flat out wrap and ate! Picture would've been included in this, however it didn't occur to me to take a picture until I finished it. Sorry.

Date night

Yesterday when I got home from work my boyfriend said he had a surprise and I needed to change into something nice but casual,which thrilled me because we often don't have anywhere to go that would involve me having to" look cute " , we headed out and all he would say is that they don't start dinner service until five. Err , we arrived in Athens, Ohio . A little place named Sol, a Cuban restaurant off court st.  I got a gauva  mojito, which was amazing and as an entree (they offered several vegetarian options) the tofu picadillo , amazing  and perfectly seasoned.

The weight issue...

I have never had trouble with my weight, until I hit my late 20's...depression hit and my waistline expanded. I used to weigh about 150-155lbs, Now its like 180-185, after starting to hit the gym like a lunatic and losing  15 lbs, which I might add was no easy job. This brings me to my current weight of 184, everyone thinks guys don't care, not true. Truth is guys do care about their weight, we just don't tell everyone, well...I tell my close friends , all two of them . So after about 9 days of being "too busy" , I am hitting the gym today! And on a Monday too!

Our original recipe , holiday stuffed pasta shells

So my partner and I just made the most amazing stuffed pasta shells, I'm super excited about this and I will include the recipe later but for now here are some pictures. ( vegetarian )
One of my favorite things about cooking is the conversations you have, most of my memories of when I was a kid are of my mother and I cooking or baking, talking about everything and the laughter. I love laughter. Oh, and the food of course.

A liitle something yummy

This is Quorn cutlet (completely vegetarian) with steel-cut oat risotto and roasted asparagus, that was made by my own personal chef, haha or partner. Simple and fantastic, the risotto was amazing! Basically if you want a great vegetarian dining experience around the Mid Ohio Valley  you have to make it yourself, or be really fortunate like me and have a partner who has graduated from culinary school and isn't afraid to cook for a veggie lover.

Getting started

OK, so here it is, my ideas, random thoughts and other miscellaneous information about me and my life since I have moved into the country or Little Hocking Ohio. I have some friends whom have blogs and they seem to love it, I actually think it may act as some sort of therapy, I guess we will see.

So first things first, about me, ehh
I am 35yrs old, in retail management at a fabric store which shall remain nameless, I have a partner of almost 7 years (JESUS CHRIST 7 YEARS) whom I love with everything in my soul. I was born in Sylvania Ohio and graduated from high school in West Virginia and then moved to Charlotte North Carolina with my best friend, after a turn of unfortunate events life brought me back to WV for some mental recuperation and much needed family time. I am trying my hardest at making it here (I am very much a "city guy" ) and most of the things I enjoy are not located anywhere near me now.So with the help of some great friends and family I am trying to grow and be an adult and less impulsive and all the things they say you should be when you " grow up",  This is my story so far.
